Recipe #18: Caramel Apple Crunch

Every fruit is going to have its own season however one of the more consistently year-round, ripe fruits are apples. Don't ask me why because I have no idea. I suppose it's because they can be grown all over so no matter the season we can find at least a batch of apples somewhere. Since they are not too expensive anyway they work out very well for any occasion.

Well, I stand by the fact that I'm not a great baker. So luckily with this recipe: http://www.stephsbitebybite.com/2012/05/29/grilled-apple-pie-breakfast-stack/. I did not have to bake them! I've got to say that this specific recipe seemed overwhelming and maybe a bit overkill. So I modified this dish in a few ways.

Not only did I not make this for breakfast but I also chose to not cut the apples into rings. I should've taken the recipe's direction by purchasing the apple cinnamon yogurt. Instead, I thought I'd kill two birds with one stone by using my leftover Greek, plain yogurt. I had cinnamon and sugar so I thought, "How hard could this be?"

The answer: Hard when you don't use the right kind of yogurt. No matter how much cinnamon and sugar I added it tasted like sour cream. Yuck. Learn from my mistakes and make sure you try this. This dessert is fantastic no matter when it is prepared and tastes great no matter what time of day.

Ingredients:

* 3 Gala apples (or those of tour choice)
* 1 cup of granola
* Just a small handful of sliced almonds
* 3 servings of apple cinnamon yogurt
* 1 Tbsp of Cinnamon Powder
* 1 can of non-fat whipped cream (or your preferred choice)


Cooking Directions:

Chop the apples into quarters and then slice the quarters into 1/4 inch slices.


In a medium frying pan fry the apples, cinnamon, and almond slices on medium high heat until the apples are easily bendable and soft. Remove from heat.


In a smaller bowl place the granola and the caramel sauce together. Mix until the granola pieces are nicely and evenly coated. Mix the apples into this mix and temporarily set aside.


In a serving bowl scoop a desired amount of apples into the bowl. Then add a scoop of the apple cinnamon yogurt. Lastly top off with whipped cream. Serve immediately.
