Well I decided to make breakfast for dinner because the recipe from: http://annies-eats.com/2009/08/21/bacon-egg-and-toast-cups/ and it really made me smile when I saw it. I had never seen this version of bacon and eggs before and I thought it was a very neat twist. What a very effortless yet rich variation. I had to go buy my own muffin pan but it will be great when I make this recipe again as well as several other recipes that require this kind of baking pan.
* 4 Eggs
* 4 Slices of Bread
* 4 Slices of Bacon
Cooking Directions:
First, preheat the oven to 400 degrees Fahrenheit.
Take the slices of bread and grab a 2" x 2" cup and place the top of the rim onto the slice of bread.
Take cooking scissors and cut out the bread circle.
Spray the muffin pan generously with cooking oil.
Place the pieces of bread into the muffin pan.
Take a slice of bacon and wrap around the top of the piece of bread.
Then crack an egg and pour the egg yolk and only part of the egg white into the individual muffin slots.
Place the pan in the oven and bake for 15 minutes.
