Recipe #8: Crab Meat Rangoon Chips

As you all are aware, I started a recipe last night that slow cooked all night. Salivating this morning when I awoke from the aroma, I went to cut the chicken but it just fell apart with a fork. I added the corn starch to thicken the sauce as well. I've yet to overcook a dish that requires slow cooking but I stored the meat in the refrigerator all day so the meat wouldn't toughen in the crock-pot. Luckily and conveniently, it was easily re-heated in a saute pan.

Crock-Pot Honey Chicken 
With my main entree already prepared I only needed an appetizer, or at least some kind of side dish, to accent the sweet and salty balance of the chicken. If I had been able to expend more energy I would have jumped with joy at how cute (can food be cute?) and how perfect this hors d'oeuvres became with the Asian-inspired meal. These are now definitely on my list as a finger food option at a party.

The recipe for the crab meat rangoons did state to buy the more (very) expensive, real crab meat. Thinking outside of my usually cheap box I truly did consider the purchase. Well once I had justified to myself that spending $8.00 or $9.00 was going to be fine on just the crab meat alone I was mortified to see that the very small 4 oz container was not only $15.00 but it was ON SALE from $18.00. Ooh, heck no! I grabbed the imitation crab meat that was 10 for $10.00.


There were a couple of other ingredients that I simply replaced with other products or I just simply did not need. But the concept of these chips being stuffed with the crab meat rangoon reminded me of little food trucks. They were a lot of fun and they tasted wonderfully creamy and soft with the Crock-pot Honey Chicken. Please try both foods (and together), I think you will be surprised at the low maintenance of each of these recipes.

Ingredients:

* 1.5 Tablespoons of Plain Greek Yogurt
* 6 oz of Boursin Cheese
* 1 tsp of Low Sodium Soy Sauce
* 1/2 tsp of Worchester
* 6 oz of imitation crab meat
* 2 Green Onion
* Fritos Scoops


Cooking Directions:

First preheat the oven to 350 degrees Fahrenheit.

Combine the Plain Greek Yogurt, the Boursin Cheese, the Soy Sauce, and the Worchester Sauce in a medium size mixing bowl. Mix well.



Next, mince as finely as possible the imitation crab meat. Then dice the 2 Green Onion. Add both ingredients to the mixture and make sure everything is well-blended.


On a cookie sheet, lay out 24 Frito Scoops onto the tray. Place 1 tablespoon of the crab meat mixture on each chip.

Place in the oven and let bake for roughly 15 minutes, or until the tops begin to brown.



Place on a serving platter and enjoy hot.
