Recipe #19: Caramel No Bake Cookies

When I was a kid I used to play volleyball competitively in a club league. Several of the parents would provide snacks for the team. One of the recipes that stood out through the years were no bake cookies. They were sweet, fun, and filling. I started thinking about this recipe because we would often times eat these when it was hot outside. The parents were smart because this recipe was low cost but also very simple.

Now I do not have children (yet) so I did not have any event to take these but my 2 doggies really wanted them once they smelled the peanut butter. I felt I needed a snack that was appropriate to the season but also very simple to make. So, I would apologize for not really spending a lot of time on the recipe but they are too addictingly good to possibly go there. These cookies are the "bomb-diggity". And yes, I really just said that.

Ingredients:

* 1 cup of Brown Sugar
* 1/2 cup of Milk
* 1/2 cup of butter
* 1 cup of peanut butter
* 1/2 cup of Caramel Sauce
* 3 and 1/2 cups of quick oats
* 1 cup of Coconut
* 1 Tbsp Vanilla









Cooking Directions:

First, mix together the brown sugar, milk, and butter in a medium sauce pan over high heat. Bring to a boil for only 1 minute.


Remove from the heat and add the peanut butter, caramel sauce, coconut, quick oats, and vanilla flavor.


As soon as the mixture is evenly coated, take 2 Tablespoons of the cookie dough and place in balls onto wax paper. Repeat this until all of the cookie dough is on the wax paper.
