Recipe #9: Miniature Lemon Tarts

Yesterday my Dad was admitted to the heart hospital because he was experiencing some very scary symptoms. Even though there was some bad news with his heart condition the great news is that he is stable and is with the best heart doctors in the state of Indiana.

Since he is currently being held for observation I spent the majority of my day with him at the hospital. I was feeling tired and anxious tonight from everything that had transpired so I was not excited to cook anything that required a lot of time or energy.

When I was at the hospital my Dad had ordered a fruit plate and that was what ended up inspiring me to make this recipe. It is similar to last night in that it falls in the finger food category but it is a dessert. I decided to purchase the ingredients anyhow and make my own recipe, which did not end up being a challenge at all. Hilariously, the Shortbread Tarts ended up being much smaller than I anticipated so I am now stuck with an unnecessary amount of raspberries and blueberries...oh well, I don't regret that my recipe only took 5 minutes!

Ingredients:

* Shortbread Tarts
* Lemon Curd
* Raspberries
* Blueberries






Cooking Directions:

First, lay the shortbread tarts onto a plate.

Spread 2 tablespoons of lemon curd onto each shortbread tart.


Wash the raspberries and blueberries and pat to dry.

Place one raspberry and 2 blueberries onto each tart.

Serve cold on a platter. Yum!
