Recipe #37: Garbage Salad

The first salad I made for Ian was a compilation of several ingredients I knew he enjoyed. When we first met I had remembered at the grocery store that his favorite vegetable was green beans. He loves fresh mozzarella, avocado, and of course tomatoes so I decided to make him a salad with all of those ingredients.

He may be biased but he said he absolutely loved this salad since it was really creamy and fresh. It's been 4 years since I've made him this salad and since we just celebrated our 4 year anniversary I decided to make him this salad that he tells me he still loves. The only ingredient I added was prosciutto and I can't believe I did not add it in the first place. I encourage you to try this salad, I think you will love it as much as Ian!

Ingredients:


* 2 Heads of Romaine Lettuce
* 1/4 lb of Prosciutto
*1/4 lb of Fresh Green Beans
* 6 oz of Fresh Mozzarella
* 2 Roma Tomatoes
* 1 Avocado
* Ken's Light Oil and Vinager Dressing




Cooking Directions:

First boil water in a small pot. Once boiling add the green beans and cook for only 1 minute.

Drain the green beans and then soak in ice cold water for another minute.

On a cutting board cut the green beans in half and add to a large serving bowl.

Chop the romaine lettuce and place in the serving bowl.

On a cutting board peel and slice the avocado.

Then dice the tomatoes and place both the avocado and the tomato into the bowl with the lettuce.

Slice the mozzarella and add to the bowl with the other ingredients.

Pour your desire amount of dressing into the bowl and toss the salad.
