She did ask me to bring some kind of side dish and since I knew she would be having sushi this evening I decided to follow the Japanese theme. I found recipe: http://www.smokywok.com/2011/03/hiyashi-chuka-cha-soba-version-or.html and I did my best to follow the directions accurately. But let me just say the hardest part of this whole recipe was cooking the egg. I had to improvise a couple of the ingredients list and on top of that I think I need a little bit more practice rolling and slicing the cooked egg. But, practice makes perfect right? I think I'll give this recipe another go in the future because for my first try I was pretty happy with it!
* 20 oz of Soba Noodles (2 packages)
* Canola Oil Spray
* Extra Virgin Olive Oil
* 1 cucumber
* 3 Roma Tomatoes
* 5 Green Onion
* 8 oz of Crab
* 4 Eggs
* 2 Tbsp of Rice Vinager
* 2 Tsp of sugar
* 1 tsp of salt
* 1 container of Ginger Dressing
Cooking Directions:
First, bring a large pot of water to a boil.
Place the noodles in the water and cook for 4 minutes.
Remove from heat, drain, and rinse with cold water before adding a drizzle of the olive oil.
Pour these noodles into a large bowl.
In a small mixing bowl add the eggs, sugar, and salt and whisk together.
In a medium frying pan, heat over medium heat with canola oil spray.
Once heated add the eggs to the pan but only pour a thin layer of the egg mixture. (You may take 2 or 3 times in the frying pan to cook all of the eggs.)
Cook the eggs and place on a plate. Once cooled roll the egg up like a fruit roll-up. Then slice in very thin slices.
On a cutting board, thinly slice the the cucumber and crab.
Then dice the tomatoes and the green onion.
Add the tomatoes onto the middle of the noodles.
Then add the ingredients individually around the tomatoes.
