I suppose swimming does count as a form of exercise but it is not like we are doing any kind of rigorous exercise. I decided since we have been eating a lot of unhealthy foods and drinking a lot of alcohol I would be more conscious of the foods I prepared at home with Ian. He is so flexible that he will literally eat anything I make so I have decided to take more advantage of that. If we are not going to be running a couple of miles every other night I will do what I can to be bringing home more foods that are better for both of us.
I got this recipe idea from: http://www.onceuponacuttingboard.com/2012/07/smashed-pea-dill-and-feta-crostini.html. I followed the recipe pretty closely and I think it turned out very similarly to this blogger's version. I can't say I will make this recipe again even though it did not taste bad. In fact, it was pretty good but I was not 100% sold on how each of these ingredients complemented one another. If this recipe sounds good to you than please give it a try but I'd like to hear your thoughts too!
* Half a loaf of Crusty French Bread
* Half of a bag of SteamFresh Peas
* 4 Cloves of Garlic
* 3 oz of Crumbled Feta Cheese
* 0.33 oz of Fresh Dill
* 2 Tbsp of Lemon Juice
* 2 Tbsp of Extra Virgin Olive Oil
Cooking Directions:
First preheat the oven to 350 degrees Fahrenheit.
Place the SteamFresh bag of peas into the microwave and cook under the directions of the bag.
Once the peas are cooked place them in a bowl and smash them with a large spoon.
On a cutting board slice the bread into about 1/2 inch slices and place them on a cookie sheet.
Mince the garlic and the dill but keep them separated.
Add the feta cheese and the garlic to the smashed peas.
Pour both the lemon juice and the extra virgin olive oil into the bowl of ingredients.
Mix all of the ingredients together and then scoop a healthy amount onto the slices of bread.
Sprinkle the dill onto the top of each mixture.
Place the cookie sheet in the oven for about 10 minutes and then serve immediately.
