But honestly, ever since I stopped working there (which it has been several years now) I have not revisited my favorite ice cream store. On top of that I have never thought to recreate this version I very much remember until just now. And it's good timing, too. I'd prefer to remake this dessert in this weather versus the middle of winter! (Not that I would turn it down if I am ever given the choice.)
The other difference besides the ice cream was the type of shortcake I remember being used. Standard shortcake is light, fluffy, sweet, but filled with a lot of air. I recollect that what I had eaten was more of a dense pound cake. So when I visited the grocery store tonight I made sure I noted this preference in my ingredients. So even though the ice cream I bought was just Kroger brand vanilla and not homemade I'd say this version is pretty close to the real deal. But like I said, it has been several years since I last visited. Maybe I'll have to go back to Handel's to compare the two...
* 1 Pint of Kroger Brand Vanilla Ice Cream
* 1 lb, or 16 oz, of Butter Sliced Creme Cake
* 12.75 oz of Glaze for Strawberries
* 1 container of strawberries
* 1 container of Kroger Brand Lite Whipped Topping
Cooking Directions:
First, rinse your strawberries with cold water.
Place them on a cutting board and slice off the tops. Then slice the strawberries in quarter pieces.
In a serving bowl, place one slice of the creme cake on the bottom.
Take half a cup of ice cream and place on the top of the creme cake.
Place the strawberries over the top of the ice cream.
Place roughly 3 tablespoons of the strawberry glaze on top of the strawberries.
Then place a large dollop of cool whip over the top of the glazed strawberries and serve right away.
