Recipe #47: Swedish Fish Sushi

I do not think I have properly expressed to you how much I love sushi. Considering that I have not made an authentic Japanese dish with raw fish is pretty shocking. Honestly, whenever I go out to dinner with anybody (whether it be family or friends) our choices are always between sushi and something else. Nine times out of ten the decision is sushi...seriously.

In fact, we were planning on getting sushi for dinner tonight when I remembered that my sister is graduating with a Master's degree this Saturday. She is going to order an enormous sushi tray as part of the celebration. So because of this upcoming sushi binge I decided to keep my anticipation for Saturday. So not to trick anyone who is reading but I have not made sushi in the traditional way you might imagine.

I admit, I had a sweet tooth tonight for a treat sweeter than natural fruit juice. (These are the times when I usually buy a bag of Gummy Bears or Swedish Fish to fill that void.) So taking all of these factors into consideration I found this blog: http://thevillagecook.com/sushi/. These sugary treats are so cute and tasty as well as a great party favor idea!

Ingredients:

* 1/4 cup of Butter
* 4 cups of Mini Marshmallows
* 4 cups of Rice Krispie Cereal
* 1 tsp of Vanilla Flavor
* 1 bag of Swedish Fish
* Green Fruit Roll-Ups (mine were blue and green)






Cooking Directions:

In a medium sauce pan melt the butter and marshmallows over medium low heat.


Once melted, add the rice krispie cereal and vanilla flavor. Stir to evenly mix.

On a cookie sheet add a long piece of wax paper.

Pour the mixture onto the wax paper and spread into about a 1/2 inch thick layer.


Place the cookie sheet in the refrigerator for about 30 minutes to transform the wet mixture into a solid rice krispie treat.

Remove from the refrigerator and slice bars about an inch wide and about 3 inches long (same length as the fruit roll-up for a sushi roll style)

Place the rice krispie treat onto the fruit roll up and then add 2 Swedish Fish onto the top of the rice krispie treat.




Roll up and then slice into pieces.


For Nigiri Style, slice the rice krispie treat into about 1 inch wide and 2 inch long pieces.

Place one Swedish Fish on the top and then add a thin slice of fruit roll-up around the fish and rice krispie treat.
