Recipe #79: Boneless Beef Ribs

We have not had a good steak this entire summer, and if you know Ian and I well than you may find this hard to believe! If you don't know us very well than I'm (somewhat) embarrassed to say we used to lead a very careless lifestyle; we'd find ourselves at a Texas Road House, or some commercial steak house, almost every weekend. We'd order our steaks rare with a glass of red wine and finish the meal with a cigarette (or two)...my my how the times have changed. We've finally quit smoking and we rarely eat red meat anymore. We haven't cut it out of our diets completely but we've just severely cut back and rather unconsciously so.

In leading a much healthier lifestyle we haven't noticed too much the lack of red meat in our meals. But when I visited the grocery store I noticed that there were boneless beef ribs on Manager's Special. It was tremendously discounted and the meat was still very fresh so I took advantage of this opportunity. I went home and marinated the meat all afternoon. We ended up grilling at my parents' house and not only did we realize how much we missed steak but we missed the char-grilled flavor that only the grill can unfailingly provide. I don't think we will eat this every weekend like we used to do before but I do think that it made us want to eat it more often than we have been!

Ingredients:

* 1/2 lb of Boneless Beef Ribs
* Extra Virgin Olive Oil
* Pinch of Salt
* Pinch of Pepper








Cooking Directions:

First score the meat by puncturing it a few times on both sides with a steak knife.

Then drizzle the olive oil over the meat and give a massage rub with your fingers.

After washing your hands sprinkle with the salt and pepper.


Cover and place in the refrigerator for 4 hours.

After preparing the grill add the meat and cook for about 5 minutes on both sides for medium.

Remove from the grill and serve with preferred sides dishes.
