But trying on our dresses today put more than just this past year in perspective. It made me realize that I've grown in more ways than one...I think it may have been the combination of quitting smoking and discontinuing our exercise routines after our vacation this summer. Yes, in fact, I'm sure of it. The bridesmaid's dress still fits (thank God) however it is a little less forgiving in the tummy area than I remember. So I have about 6 weeks to kick my sorry tush into shape and because it was raining when I got home I decided to kick start my mission with a healthy dinner.
* 1 package of Prosciutto
* 1 Loaf of Garlic Bread (or your preferred loaf choice)
* 1 bag of raw Spinach Leaves
* Olive Tapenade
* Parmesan Cheese Shavings
* Extra Virgin Olive Oil
* Balsamic Vinaigrette
Cooking Directions:
First, preheat the oven to 350 degrees Fahrenheit.
In a large saute pan add enough olive oil to lightly coat the pan and heat over Medium.
Add the bag of spinach leaves and cook for only a couple of minutes to wilt the leaves.
On a cookie sheet add about 12 slices of bread to make 6 sandwiches.
On 6 slices add one slice of prosciutto.
Then add a desired amount of spinach over the top of the prosciutto.
Add a thin layer of Parmesan cheese over the spinach.
Spread a small amount of olive tapenade over the other slice of bread, which would be the top of the sandwich.
Add this slice of bread onto the Parmesan cheese.
Repeat these steps until all 6 sandwiches are prepared.
Brush a small amount of Balsamic Vinaigrette and Olive Oil over the top of the sandwiches.
Place the cookie sheet in the oven and cook for about 8-10 minutes.
Remove from the oven and serve with any leftover spinach.
